The night after we saw the Northern Lights<\/a> at Hotel Laki<\/a> (which is an amazing place to stay and ideal to see the Northern Lights), we woke up bright and early for breakfast after which we promptly fell asleep again till lunchtime.<\/p>\n

\"5<\/a><\/p>\n

In our defence, we’d been up till 6 am watching the Northern Lights so we were entitled to a little post-breakfast snooze. But I digress…<\/p>\n

After our snooze, we received what I considered to be a reward of sorts for finally seeing the Northern Lights; a 7-course meal.<\/p>\n

All sourced locally as well and all so tasty. I have lots of time for good food and the Hotel Laki definitely nailed it on the food front.<\/p>\n

We started off with smoked salmon, creme fraiche, salmon terrine and black caviar blinis.<\/p>\n

\"5<\/a><\/p>\n

And boy were they the perfect little party starter. (The party in my tummy that is)<\/p>\n

\"5<\/a><\/p>\n

\"5<\/a><\/p>\n

We moved on to the second course, smoked lamb, melon, pomegranate, strawberries and raisins; in what proved to be a successful combination of a fairly diverse set of ingredients.<\/p>\n

\"5<\/a><\/p>\n

My tummy was making it’s way to the dance floor by this point, the food was that good.<\/p>\n

Plus, I’m pretty sure this is the first time I’ve had smoked lamb and it just worked!<\/p>\n

Next up, Lobster!<\/p>\n

I feel like there’s no need to even say anything about this asides from to confirm the fact that it tastes as good as it looks,<\/p>\n

\"5<\/a><\/p>\n

The fourth course was Salmon, lemon butter and parmesan biscuits. Yes, you heard right – parmesan biscuits!<\/p>\n

Again, this course was sheet perfection.<\/p>\n

\"5<\/a><\/p>\n

The flavours just burst in your mouth and pretty much left us all at the table moaning with sighs of delight.<\/p>\n

\"5<\/a><\/p>\n

We must have looked like an odd sight with all that moaning but with food that good, who cares what you look like, right?<\/p>\n

Then we moved on to the main of Icelandic lamb.<\/p>\n

\"5<\/a><\/p>\n

We already established<\/a> that Hotel Laki<\/a> does amazing lamb and this is was no exception… \ud83d\ude42 Mmmmmm *licks lips*<\/p>\n

\"5<\/a><\/p>\n

Then we moved on to the final two courses; desserts!<\/p>\n

\"5<\/a><\/p>\n

I’m a dessert kinda guy so if you give me a chance to pick more than one, I always will!<\/p>\n

\"5<\/a><\/p>\n

The first pudding was coffee creme brulee and dessert the second was chocolate cake with ice cream topped with caramel sauce.<\/p>\n

We washed everything down with wine and finished off with teas and coffees.<\/p>\n

We were left grinning like Cheshire cats, happily patting our now overly round tummies and absolutely fueled to carry on your journey to our next stop on our trip across Iceland.<\/p>\n

Our stay at the Hotel Laki<\/a> was absolutely amazing and one of those experiences that just made the trip really fantastic.<\/p>\n

The Northern Light, lovely rooms, a fantastic atmosphere, not to mention the amazing staff and tasty dishes all made for such a lovely and definitely memorable time.<\/p>\n

\"5<\/a><\/p>\n

Our next stop was J\u00f6kuls\u00e1rl\u00f3n; the Iceberg Lagoon!<\/p>\n

This is one of those places I’d always wanted to see but it seemed to be hard to fit into our plans.<\/p>\n

\"5<\/a><\/p>\n

The weather in Iceland was still extremely bad; there were storms everywhere.<\/p>\n

\"5<\/a><\/p>\n

This all meant we had to cancel our glacier walk again.<\/p>\n

\"5<\/a><\/p>\n

After all, the winds would have made it impossible to do any glacier walking anywhere) which meant that we now had time to visit the Glacier Lagoon!<\/p>\n

\"5<\/a><\/p>\n

We made a few pit stops on the way of course!<\/p>\n

\"5<\/a><\/p>\n

And stopped for ample photography opportunities.<\/p>\n

\"5<\/a><\/p>\n

Boy, do I love a good road-jumping shot!<\/p>\n

\"5<\/a><\/p>\n

Then again, I guess if there ever was a place to do it, it would be Iceland.<\/p>\n

\"5<\/a><\/p>\n

Finally, we arrived at J\u00f6kuls\u00e1rl\u00f3n.<\/p>\n

\"5<\/a><\/p>\n

The weather was as expected but it was actually quite thrilling to be exploring the Iceberg Lagoon with the snow.<\/p>\n

\"5<\/a><\/p>\n

It was also totally freezing! <\/p>\n

\"5<\/a><\/p>\n

Which made it quite a challenge to stay outside for long periods of time. <\/p>\n

\"5<\/a><\/p>\n

Though, we gave it our best shot! <\/p>\n

\"5<\/a><\/p>\n

The wind was so blustery, I swear the snow was going sideways. <\/p>\n

\"5<\/a><\/p>\n

But, it was still beautiful. <\/p>\n

\"5<\/a><\/p>\n

And, we probably got a little frostbite, too. \ud83d\ude09<\/p>\n

\"5<\/a><\/p>\n

\"5<\/a><\/p>\n

Finally, we headed off on a long drive to the next hotel we would be staying in and the storm fully kicked in!<\/p>\n

These are the photos I’d been meaning to show you about how snowy it had been all week in Iceland! Oddly enough, the snow also clears quite quickly but when it snows, it truly goes for gold.<\/p>\n

We stopped by again on the way back at the glaciers.<\/p>\n

\"5<\/a><\/p>\n

Now, these are the glaciers are the ones that have ice caves but unfortunately, we still couldn’t go in (not that we tried to at this stage), it was still great to see it in person though!<\/p>\n

And we have more reasons to return to Iceland.<\/p>\n
