Azure at InterContinental Hua Hin Resort begins an exciting new chapter of authentic Italian dining, welcoming Sicilian-born Executive Chef Mario Caramella to bring timeless Italian traditions, thoughtful local sourcing and the vibrant flavours of Hua Hin’s coastline to the table.
Born in Sicily and shaped by more than three decades in luxury hospitality, Chef Mario brings a philosophy grounded in simplicity, craftsmanship and respect for ingredients. Rather than reinventing Italian cuisine, he celebrates its enduring traditions through authentic techniques and carefully selected produce.
Azure’s menu reflects this philosophy with dishes that honour both Italy and Hua Hin. Seafood is sourced from local coastal communities, while locally crafted butter adds richness to classic recipes. Pizza dough is slowly fermented to develop flavour and texture, and signature dishes showcase both culinary precision and the generosity at the heart of Italian dining.

Highlights include Il Mare Nel Secchio, a seafood feast inspired by Southern Italy’s fishing villages; Risotto All’Onda, prepared using the traditional “like a wave” technique rarely found outside Italy; and Azure’s refined Tiramisù, bringing a timeless Italian classic to Hua Hin’s shoreline.
