Daddy Deli Group announces acquisition of Lawson Artisan Bakery
A partnership built on quality, craftsmanship and a shared vision for growth
Daddy Deli Group has announced the acquisition of Lawson Artisan Bakery, bringing together two well-established local businesses with a shared commitment to quality ingredients and serving real food, freshly prepared.
Founded by husband-and-wife team Lawson and Iris in 2020, Lawson Artisan Bakery quickly established itself as one of Hua Hin’s leading independent bakeries.
Through traditional artisan baking techniques, small-batch production and a commitment to using only real ingredients, the bakery developed a loyal following among residents seeking authentic, freshly baked products.
Its sourdough breads are crafted using a live, 90-year-old culture that has been nurtured and maintained over generations, creating flavour, texture and character that cannot be replicated through the shortcuts commonly used in mass-produced bread.

Under the new partnership, Lawson and Iris will lead the bakery division of Daddy Deli Group. They will be based at Harvest Bakery in Hin Lek Fai, located within Hua Hin Health Park at the entrance to Black Mountain Golf Course.
From there, they will oversee the continued development of Harvest Bakery, support the group’s expansion plans and lead the production of fresh artisan breads, pastries and cakes for retail and wholesale customers.
The purpose-built bakery also features a large glass viewing area, giving customers a behind-the-scenes look at the kitchen team handcrafting and baking fresh breads, pastries and cakes throughout the day.

“I’ve admired Daddy Deli Group for some time. What impressed me wasn’t just the growth, but the quality they maintained along the way.
“When Adam approached us about joining the group and helping to expand Harvest Bakery, we immediately saw the opportunity to take what we had built and bring it to a much wider audience.
“My dream was always to grow the bakery, and joining Daddy Deli allows us to focus on what we do best while becoming part of something much bigger.”
A search for the best
Peter Hagstedt explained:
“Hua Hin has some fantastic small bakeries, but with the scale and consistency needed across our restaurants, we struggled to find a local supplier that could deliver exceptional quality every single day.
“Great food starts with great ingredients, and that’s especially true when it comes to bread.
“We spent months searching, including working with suppliers from Bangkok, but Adam and I agreed from day one that we didn’t want frozen, mass-produced dough being trucked in, as so many local businesses have had to resort to.
“We knew the only way to guarantee the quality we wanted, including fresh daily baking, real ingredients and artisan techniques, was to do it ourselves.”
Built around quality and community
Adam Clark said:
“Our objective wasn’t simply to find the best bakery solution for our own venues. We wanted to build a local artisan bakery capable of supplying restaurants, cafés and hotels throughout Hua Hin with genuinely fresh, handcrafted products, while also creating a destination bakery for residents and visitors.
“What attracted us to Lawson wasn’t just the quality of his products. We saw the same passion and attention to detail that Peter has always had for steaks, pizzas and great food, but applied to artisan bread and traditional baking.
“Like us, Lawson refuses to take shortcuts. He’s obsessed with using the very best ingredients and doing things properly, and that’s exactly the kind of person we wanted to lead the next chapter of Harvest Bakery.”
Freshly baked artisan products
Harvest now offers a growing range of artisan sourdough breads, baguettes, focaccia, ciabatta, croissants, pastries, babka, muffins and cakes, all baked fresh daily using traditional artisan techniques and premium ingredients.
Customers can enjoy the products in-store or have them delivered directly to their homes through Grab.
The group’s wholesale division also supplies restaurants, cafés and hotels looking for a genuine artisan bakery partner.

To support its continued growth, Daddy Deli Group has invested in a purpose-built central bakery facility at Harvest in Hin Lek Fai, as well as a dedicated delivery vehicle.
New branches planned for Hua Hin and Pattaya
The next phase of expansion will see Harvest open a new branch in central Hua Hin, together with its first Pattaya location. Both are scheduled to open before the upcoming high season.
One of the biggest drivers behind the acquisition is the planned launch of Harvest’s artisan sandwich range in September.
Customers will be able to choose from a wide selection of premium fillings, served with their choice of sourdough, baguette, focaccia or wrap, creating one of Hua Hin’s largest made-to-order artisan sandwich menus.
The full range will be available both in-store and for delivery through Grab.
Peter Hagstedt added:
“One of the reasons Subway has been so successful is that customers love having the freedom to build a sandwich exactly the way they want it.
“Our vision is to bring that same level of choice to Harvest, but using artisan bread baked fresh every morning and premium ingredients throughout.
