Gluten-Free Mixed Berry Cobbler (use fresh or frozen berries!)

Berry season always comes and goes so quickly that I like to make a couple of berry cobblers before summer passes us by… And this gluten-free cobbler recipe is as good as they get! Serve it up in a pretty dish for company, topped with homemade whipped cream or vanilla ice cream!

I originally created this gluten-free cobbler recipe (which is also grain-free) to work when cooking outside on our outdoor 3-burner propane stove.

For several years now, I have been cooking outside during the hot months — simply by bringing portable electric appliances outside or by cooking over the charcoal grill.

Cooking outside really helps keep the house cool, but also, I think the food tastes better when cooked on the BBQ!

Not to worry, I have adapted this recipe so it works both for the oven and an outdoor grill.

What I love about the BBQ we got is that it came with a barbecue box that covers 2 burners, and that can function as an oven as well as the usual grilling applications. For the third burner, we purchased a reversible cast iron grill/griddle.

Both the box and the grill/griddle are removable, which offers the option of cooking right over the burners — like for pressure canning, or making a stew or sauce in a Dutch oven, or even using a big cast-iron skillet.

I have tried so. many. things. on the stove already. Just about everything is turning out fantastic.

The best part? My cooking isn’t heating up the house!

Why I Love This Recipe

This gluten-free cobbler is wonderful if you’re low carb, keto, or a Trim Healthy Mama.

When I was on THM (with a traditional food bent) I needed this particular dish to be a low carb S dessert, and at the time we also had a child who was on the GAPS gut-healing protocol, so this cobbler worked well for us both.

Making homemade whipped cream keeps it an “S” meal for me and I didn’t even miss the ice cream!

The other thing I love about this cobbler is that you can use fresh or frozen fruit. We like to pick fresh fruit and freeze it to use later for making homemade jam, or desserts like this cobbler.

Frozen or fresh peaches work like a dream, too!

Flavor Variations

As I mentioned above, gluten-free cobbler lends itself to pretty much any fresh or frozen fruit. We love it because that means you can have cobbler much more often without getting bored!

Swap out the mixed berries and opt for fruits such as:

  • peaches
  • pears
  • cherries
  • plum
  • strawberry-rhubarb
  • apples

Gluten-Free Cobbler Tips & Tricks

There are some minor tips you’ll want to make sure you pay attention to in order to get the best results from your cobbler.

  • When using frozen fruit, it’s best to defrost it completely and allow any excess moisture to drip through a colander.
  • Use fresh ground flaxseed meal (if you have any extra, be sure to store it in the freezer as ground flax can go rancid quickly).
  • My personal opinion is that butter adds a nice flavor to this cobbler, but if you need to avoid it for dairy reasons, coconut oil works just as well.
  • Definitely top this cobbler with fresh homemade whipped cream or creamy homemade ice cream. Make sure your whipped cream is as cold as possible, then dollop on top of the hot cobbler and let it melt all over! YUM!
  • Let your butter come to room temperature so it’s easier to “cut” it into the dry topping.
  • Baking time will vary depending on the fruit you use. If you use frozen fruit, check after 25 minutes. If you use fresh fruit, check after 20 minutes.
  • Cover the cobbler if the crust starts browning too much before the filling is nice and bubbly.
  • This recipe works well when cooked in a cast iron pan on a BBQ, too! It’s fun to plop down in the middle of the table, dollop with ice cream, hand out spoons to your family, and everyone dig in! No plates necessary!
  • You can sub the coconut flour with your favorite gluten-free flour, or even a sprouted flour for those who can enjoy it.
  • This powdered stevia works well if you’d like a sugar-free option (be sure you know your sugar-substitute ratios!).

How To Make This Recipe

      1. Preheat the oven to 375 degrees Fahrenheit (alternatively, you can cook this on your BBQ in a cast iron pan).

  1. Place berries in the bottom of your baking dish and spread out evenly.
  2. Combine all other ingredients in a small mixing bowl, cutting in the butter (or coconut oil) with a fork or pastry cutter.

  3. Pour the topping over berry (or other fruit) mixture and spread out as evenly as possible (it’s okay if some berries are left uncovered).
  4. Place into the oven and bake for 20 to 25 minutes (depending on if the fruit was fresh or frozen).
  5. Remove from oven and let cool slightly before serving.
  6. Top with whipped cream or ice cream and enjoy!
